Our favorite cold day meal!

Friday, February 24, 2023

Hey everyone! We just experienced a blizzard here in Wyoming. Hopefully Spring will be here soon. But until then..  Whenever it’s cold and snowy, my family has our favorite go-to snowy meal. People often ask for the recipe, so I figured it would be a good time to share this delicious meal- pork chili verde.

I won’t go into too much detail, but I will share how this meal became our Christmas tradition. We lived in Southern New Mexico for 5 years. Green Chile is everything down there and now I incorporate them in almost every meal I make. 2018 was our final Christmas in NM, so we wanted to try something new to us. We fell in love with this meal and haven’t celebrated a Christmas since with out pork chili verde. Once we moved to Wyoming, the kids would beg for it any time there was snow. It makes us feel so warm and cozy when we sit around and eat our pork chili verde. I will warn you, this meal takes 3.5 hours to make, so set aside enough time. Make sure to let me know what you think!

Ingredients

  • 2 lbs diced pork. (We use pork loin cut up and have also used smoked pork rib meat, and smoked pork shoulder.).
  • 1 cup onion
  • 14 ounces chicken broth
  • 1 1/2 teaspoon garlic powder
  • 2 1/2 tablespoons chicken stock
  • 1 teaspoon celery salt
  • 1/2 teaspoon oregano
  • 1 tablespoon cumin
  • 4 tablespoons chopped cilantro
  • 1/2 tablespoon chili powder
  • 1 tablespoon green tobasco sauce
  • 14 ounces green enchilada sauce
  • 27 ounces chopped green chiles (canned works)
  • 1/2 teaspoon salt

Directions

1. In a large pot, brown the pork and drain.

2. Saute onion then add garlic and chicken broth. Add pork back in. (Broth will not cover pork entirely.) Simmer 1 hour, stirring often.

3. Add garlic powder, chicken stock, cornstarch, oregano, cumin, jalapeño, cilantro, chili powder, and green tobacco sauce. Stir. Simmer 1 hour, stirring often to avoid sticking.

4. Add green enchilada sauce and stir. Simmer for 30 minutes.

5. Add chopped green chiles in and simmer for 15 minutes.

6. Add pureed green chiles and salt to taste.

Serve with cheese, sour cream, rice, chips, and/or quesadillas.
